Banana Pudding

Banana Pudding

Sometimes the perfect dessert after a barbecue is creamy and cooling. This banana pudding fits the bill. Enjoy with cool, creamy whipped topping, if desired.

Serves: 6-8

Ingredients:4 large eggs ½ cup sugar 3 tablespoons flour ¼ teaspoon salt 2 cups whole milk 2 tablespoons banana-flavored liquor or rum ½ teaspoon vanilla extract 2 cups vanilla wafers, crushed 1 teaspoon cinnamon 2 tablespoons butter, melted 4 ripe bananas, sliced.

Directions: Preheat oven to 400°F.

Separate three of the eggs, discard the whites. In a bowl whisk together the egg yolks and one remaining egg.

In a saucepan combine egg mixture, sugar, flour, salt, milk, banana liquor, vanilla extract, and egg yolk mixture. Heat, stirring constantly, over medium until mixture begins to thicken into a custard consistency. Remove from heat and let cool slightly. Combine vanilla wafers, cinnamon, and melted butter in bowl.

Combine until mixed and crumbly.

In the bottom of a 9×9 baking dish, spread a little more than half of the vanilla wafer mixture. Spoon in half of the custard and spread evenly. Top with the sliced bananas and remaining custard. Sprinkle with remaining vanilla wafer mixture. Place in the oven and bake until topping is just golden, approximately 15 minutes.

Remove from heat and let cool before serving.
