This rub, full of Memphis flavor, is a bit richer, a bit spicier, and bit more soulful than a traditional rub. Although great on any cut of meat, this rub brings out the flavors of ribs and darker cuts of meats especially well.
Use with Basic Vinegar Mop (recipe follows), if desired.…Yields approximately 5 cups
Ingredients:…1 cup fine white sugar …¾ cup brown sugar, packed …1½ cups paprika …¾ cup garlic powder …½ cup onion powder …¼ cup salt …¼ cup chilli powder …2 tablespoons cumin …2 tablespoons cayenne powder …1 tablespoon oregano …1 tablespoon white pepper …1 teaspoon cocoa powder
Directions: …Combine white sugar and brown sugar in a medium-sized bowl. Mix with fingers or a fork until brown sugar is broken up and free of any clumps.
Add the remaining ingredients, and mix with a fork until all of the ingredients are well blended.
Transfer to a jar with an airtight lid, and store in a cool, dry place until ready to use.
