If you like spicy, there’s no reason to shy away from Memphis barbecue because of the tendency to be slightly sweet. This sauce adds heat with jalapeño, chilli, and cayenne. The kick is just perfect, especially when paired with a cooling side dish.
Yields approximately 2 cups
Ingredients:…1 tablespoon olive oil …3 cloves garlic, crushed and minced …1 jalapeño pepper, finely diced (include membrane and seeds for added spiciness) …1 teaspoon lime zest …1 cup ketchup … ½ cup brown sugar …½ cup apple cider vinegar …3 tablespoons molasses …1 tablespoon liquid smoke …1 teaspoon cumin …1 teaspoon chili powder …½ teaspoon cayenne powder …½ teaspoon coriander …½ teaspoon ground ginger
Directions: …Heat olive oil in saucepan over medium heat. Add garlic and jalapeño. Sauté until slightly soft and fragrant, approximately one minute. Add lime zest and turn heat to low.
Add the ketchup, brown sugar, apple cider vinegar, and molasses. Heat over low, stirring continuously until brown sugar is dissolved.
Add the remaining ingredients and stir well. Increase heat and bring to a low boil. Stir well.
Reduce heat and allow sauce to simmer for 15 minutes, stirring occasionally.
Remove from heat and allow cooling slightly before using, or transferring to a jar with a lid and store in the refrigerator.
