Grilled Oyster Po Boy

Po Boys are sandwiches that highlight the flavors of seafood in unexpected ways. This recipe adds a bit of kick with the grilled oyster and a cooling, but slightly spicy caper mayonnaise.

Ingredients:10 oysters in the shell 4 tablespoons melted butter ¼ cup spicy cayenne sauce 1 lemon, cut into wedges 2 French bread loaves ½ cup mayonnaise 2 tablespoons capers 1 teaspoon cayenne powder1 teaspoon lemon juice 2 cups lettuce, shredded 1 medium tomato, sliced

Directions: Prepare and clean the grill. Bring heat to about 275°-300°F.

Run oysters under cold running water.

Place the oysters onto the hot grill. Cover the grill and let cook for approximately 10-15 minutes, or until the first oysters begin to open.

Meanwhile, combine the melted butter and cayenne sauce.

Once oysters begin to open, remove them from the grill, pry open completely and remove the oyster meat. Squeeze the lemon wedges over the oysters and dip each one into the butter and cayenne sauce mixture.

Place oysters on a piece of aluminum foil and place back on the grill for 3-4 minutes to seal in the flavors. Do not overcook the oysters as they will become tough and chewy. Remove from heat and set aside.

Cut French bread loves in half lengthwise.

In a small bowl, combine the mayonnaise, capers, cayenne powder, and lemon juice. Mix well and spread evenly on the bread.

Top bread with grilled oysters, lettuce, and tomatoes. Cut each in half and serve immediately.
