Grilled Sweet Potato Wedges

Sweet potatoes compliment Memphis barbecue perfectly. The carmelization from the grill only enhances the flavor. You can also use any of the rub recipes in this book as a replacement for the suggested seasonings below.

Serves: 6

Ingredients: 4 medium sweet potatoes cut into wedges (approximately 6-8 wedges each) 2 tablespoons olive oil 1 teaspoon paprika 1 teaspoon garlic powder ¼ teaspoon cinnamon ¼ teaspoon cayenne powder ¼ teaspoon salt

Directions: Prepare and ignite your grill. Place grate over medium temperature heat source and allow to preheat for at least 5 minutes.

In a large bowl, toss the sweet potato wedges with the olive oil.

In a small bowl, combine the paprika, garlic powder, cinnamon, cayenne powder, and salt. Sprinkle seasoning over wedges until all wedges are well seasoned.

Place sweet potato wedges on grill grate, trying to avoid setting them on the hottest areas. Grill potatoes until firm tender, approximately 35 minutes, turning occasionally to ensure even doneness. Transfer grilled wedges to the hottest part of the grate for a final crisping. Grill for one to minutes.

Remove from heat and serve immediately
