Mud Pie

One of the most decadent of DzSoutherndz desserts, Mud Pie is the perfect rich, creamy, chocolate ending to your meal.

Serves: 8

Ingredients: Crust 2 cups chocolate graham crackers, crushed ½ cup pecans, finely chopped 1 teaspoon cinnamon ¼ cup butter, melted

Filling ½ cup unsalted butter ½ chocolate chips 1 tablespoon cocoa powder 2 tablespoons all purpose flour 1 cup white sugar 2 tablespoons corn syrup 2 tablespoons brewed espresso 1 teaspoon pure vanilla extract ¼ teaspoon salt 3 large eggs Whipped topping Chocolate shavings

Directions:Preheat oven to 375°F.

Combine all of the ingredients for the crust in a food processor. Pulse until finely ground. Press into the bottom and sides of a standard-sized pie dish. Place in the oven and bake for approximately 10-15 minutes. Remove from heat and let cool completely.

Reduce oven temperature to 350°F.

Place butter, chocolate chips, and cocoa powder in a large saucepan. Heat over low until butter and chocolate is melted. Remove from heat.

Stir in flour, sugar, espresso, vanilla extract, and salt. Stir until well blended. Add eggs, one at a time, blending well between additions.

Pour mixture into pie crust. Place in the oven and bake until firmly set, approximately 30 minutes.

Let cool completely. Top with whipped topping and chocolate shavings. Serve well chilled.

Grilled Peach Cobbler

Grilled Peach Cobbler

Sweet peaches become even juicier when grilled. This classic dessert takes on a rustic flare when prepared in cast iron skillet over a grill.

Serves: 6

Ingredients:8 ripe peaches, sliced in half with pit removed ½ cup butter, melted ½ cup brown sugar, firmly packed 1 teaspoon cinnamon 1 teaspoon ground ginger ½ cup quick cooking oats ½ cup pecans, chopped

Directions: Prepare and heat grill to medium heat.

Place peaches, flesh side down on the grill until they are slightly browned and soft. Remove from heat and cut into either slices or chunks, depending on personal preference.

Add about half of the melted butter, half of the brown sugar, cinnamon, and ginger to a cast iron skillet. Place the peaches on top of the sweetened and seasoned butter mixture.

In a bowl, combine the remaining butter and brown sugar along with the oats and pecans. Mix with fingers or a fork until well blended. Sprinkle mixture over peaches.

Place skillet back onto hot grill and cook for approximately 20 minutes. Remove from heat. Can be served warm or cooled.

Blue Cheese Potato Salad

A barbecue would be incomplete without someone’s famous potato salad. This rich and tangy blue cheese potato salad is sure to be on the list of most requested side dishes at your gatherings.

Serves: 6

Ingredients: 2 lbs small red potatoes, quartered 1 tablespoon olive oil 4 cloves garlic, crushed and minced 1 tablespoon fresh dill ½ teaspoon black pepper ½ cup mayonnaise ½ cup sour cream 1 tablespoon red wine vinegar 1 cup crumbled blue cheese ½ lb bacon, cooked and crumbled ½ cup scallions, sliced ½ teaspoon salt ½ teaspoon pepper

Directions: Preheat oven to 450°F.

In a bowl, combine red potatoes, olive oil, garlic, dill, and black pepper. Toss to coat evenly. Spread potatoes out on a baking sheet in a single layer. Place in the oven and roast for 30-40 minutes, tossing occasionally. Remove from oven and allow to cool completely before assembling the salad.

In a medium-sized bowl, combine mayonnaise, sour cream and red wine vinegar. Whisk thoroughly. Add blue cheese, bacon, scallions, salt, and pepper.

In a large bowl, combine the roasted potatoes and blue cheese dressing mixture. Toss to coat evenly.

For best results, cover and refrigerate for two hours before serving.
