Saucy Loin Ribs with Corn Hash

Ribs that are fall-off-the-bone tender are the dream of every grilling chef. A slow grill over low heat paired with the Classic Memphis barbecue sauce creates the perfect loin rib. Paired with a cool corn hash, this is the perfect southern duo.

Serves: 4-6, depending on amount of ribs used

Ingredients: 1-2 lbs pork loin ribs Classic Memphis BBQ Sauce

Corn hash3 cups fresh whole kernel corn 1 cup red bell pepper, finely diced ½ cup red onion, finely diced 1 tablespoon vinegar 1 teaspoon sugar 1 tablespoon fresh rosemary ½ teaspoon salt ½ teaspoon pepper

Directions: Begin by cleaning and preparing the grill.

Bring ribs to room temperature before grilling, about 30 minutes.

Heat grill to approximately 250°F.

Baste ribs with sauce, and place on the grill. Cook for 3½ hours, allowing meat to slowly cook and tenderize. Flip and baste the ribs every 30 minutes or so.

Combine the corn, bell pepper and onion in a medium sized bowl.

In a small bowl, combine vinegar, sugar, rosemary, salt, and pepper. Add the mixture to the corn and toss, coating thoroughly. Cover and refrigerate. Remove ribs from grill and allow to rest for approximately 10 minutes before cutting and serving.

Place a scoop of the corn hash on a plate, and top with a portion of saucy loin ribs.
