Ingredients: …2 lbs fresh mussels in the shell …½ cup butter… ½ cup fresh parsley, finely chopped …3 cloves garlic, crushed and minced …2 lemons, cut into wedges
Directions: …Prepare and clean grill or smoker, making sure to use an appropriate amount of wood chips to produce a good smoke. Bring the heat to approximately 300°F.
Wash the mussels under cold running water.
Place the mussels in a single layer onto the hot grill. Close the cover and let cook 5-7 minutes, or until mussels open and the interior meat is heated thoroughly.
Meanwhile, in a saucepan, melt the butter. Stir in the parsley and garlic. Let sit over low heat until ready to use.
Remove the mussels from the grill and transfer to a large serving platter. Squeeze lemon wedges from one lemon over the mussels, and drizzle with butter herb sauce.
