Smoked Mussels

Elegant and perfect for a night with friends or an intimate dinner with a loved one under a clear Memphis sky. Simple ingredients and a simple presentation allow you to concentrate on savoring the moment.

Serves: 4

Ingredients: 2 lbs fresh mussels in the shell ½ cup butter ½ cup fresh parsley, finely chopped 3 cloves garlic, crushed and minced 2 lemons, cut into wedges

Directions: Prepare and clean grill or smoker, making sure to use an appropriate amount of wood chips to produce a good smoke. Bring the heat to approximately 300°F.

Wash the mussels under cold running water.

Place the mussels in a single layer onto the hot grill. Close the cover and let cook 5-7 minutes, or until mussels open and the interior meat is heated thoroughly.

Meanwhile, in a saucepan, melt the butter. Stir in the parsley and garlic. Let sit over low heat until ready to use.

Remove the mussels from the grill and transfer to a large serving platter. Squeeze lemon wedges from one lemon over the mussels, and drizzle with butter herb sauce.

Garnish with remaining lemon wedges and serve immediately.
